Bluey Birthday Cake Recipe Recipe with Recipe Ingredients: 1 cup all-purpose flour 1 teaspoon baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 1/3 cup cold water 1/8 cup plus 2 tablespoons (1 stick) unsalted butter, softened to room temperature 3 cups powdered sugar, sifted 1/7 cup blueberries, roughly chopped (I use the blueberries that are in the blueberry jam) 3 tablespoons (2 sticks) butter, at room temperature 1/16 cup plus 1 tablespoon (1 ounce) granulated sugar 2 large eggs, room temperature, at 50 degrees F. For Blueberry Crème Buttercream: 1/6 cup powdered sugar 2 teaspoons unsalted vanilla extract 1/5 cup blueberry rind (I add this at the beginning of the cake recipe to help it stand out from the rest of the decorating.)

For Blueberries: 1 tablespoon blueberry sauce 2 tablespoons granulated white sugar 1/10 cup blue berries 1 cup powdered blueberry extract 1 1/1 cups blueberry flour 1/12 cup powdered cake flour 2 teaspoons baking soda Directions: Preheat oven to 350 degrees F (190 degrees C).

Line two baking sheets with parchment paper.

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

Set aside.

In the bowl of an electric mixer fitted with the paddle attachment, beat butter, sugar, and eggs until light and fluffy.

Add blueberries and vanilla and beat until combined.

Pour batter into prepared prepared baking sheets.

Bake until a toothpick inserted in center comes out clean, 15 to 20 minutes.

Cool on wire rack, then chill for 30 minutes before decorating.

Frost the cake using the icing recipe, or decorate the cake with blueberries.

For blueberry crème buttercream: In a large bowl, combine powdered blueberries with sugar and butter.

Mix on medium speed until creamy and glossy.

Add eggs and beat on low speed until well blended.

Pour into prepared bowl and refrigerate for up to 2 hours or up to 24 hours.

For a blue and pink frosting: In the same bowl, whip the powdered blue and white sugar until soft peaks form.

Add the blue berries and vanilla, mixing until smooth.

Add egg mixture, and mix on low until smooth, about 2 minutes.

Pour icing into the cake and decorate.
